The DeWitt-Lavaca Special Education Cooperative (DLSEC) has been celebrating Texas Public Schools Week over the course of this week. Bright and early on Wednesday, March 8, the staff and students in the RISE multi-district high school class boarded a bus to deliver trays of goodies to the administrative offices of each of DLSEC's nine member districts.
The trays of goodies consisted of homemade peach cobbler cookies because peach cobbler is the official state cobbler of Texas and pecan pie bars because pecan pie is the official state pie of Texas. Mrs. Thiry, RISE high school teacher, made sure her students were prepared to wish a happy Texas Public Schools Week to staff at each district office and to explain what the significance of the goodies was.
The students were happy to make this friendly delivery since Texas is known as the friendly state. Superintendents, principals, and office staff across the area were excited, surprised, and grateful to receive the tasty treats. Upon tasting the peach cobbler cookies, Gerald Nixon, superintendent of Yorktown ISD, said, "Who made these?...We need to hire her!"
During the delivery trip, the students worked in a math lesson as they ordered their lunches within their allotted budget at Dairy Queen in Cuero.
While on the road for this 170 mile round trip, students and staff enjoyed the opportunity to see beautiful Texas wildflowers in full bloom. Of course, the star of a Texas wildflower show is always the state flower of Texas, the bluebonnet, and there are many bluebonnets in bloom right now in our area.
The peach cobbler cookies and pecan pie bars were made by DLSEC Director of Operations Meredith Hairell and her mother Michelle Goodson. State and Federal Programs Specialist Amber Arceneaux and Operations Administrative Assistant Shelley Connelly helped, too, with packaging and preparation. The fresh eggs for the peach cobbler cookies were donated by ARD Facilitator Ashlee Coleman. The recipes were adapted from ones found on the internet and are available in the photos below.
